Mix smoked paprika, chili powder, cumin, onion powder, garlic powder, and salt in a small bowl.

Hot Tip: Chili powder can be hot. Wear gloves to protect your skin from being irritated by the spice.

    I've made this dry brine twice but for chicken. The first time was far to much cumin for my taste so I dialed that back to a 1/4 tsp and that was much better. Everyone that has tasted this adjusted recipe has raved about it.
